Tonpeiyaki

Tonpeiyaki is a popular dish from the Kansai region. It consists of stir-fried pork wrapped in a thin omelet. The name “Tonpeiyaki” comes from the method of grilling the pork flat. This recipe offers a vegetarian version without the pork.

Recipe Ingredients

You’ll need the following ingredients to make this Tonpeiyaki:

  • Use three eggs.
  • Cabbage is in season during spring and winter. Spring cabbage is soft and has a fresh color, while winter cabbage becomes sweeter when heated. Either cabbage will be perfect for this recipe.
  • Add salt and pepper to enhance the flavor of the cabbage and eggs.
  • Adding potato starch helps prevent the eggs from breaking when forming the Tonpeiyaki, but you can make it without it.
  • Chuno sauce, mayonnaise, and scallions for the classic toppings.

Ingredients
  

  • Cabbage, 230g
  • Oil, as needed
  • Salt and Pepper to taste
  • Chuno Sauce, Mayonnaise, and Scallions, for toppings
For The Egg
  • 3 Eggs
  • 1 tsp Potato Starch
  • 1 tsp Water
  • A little Salt

Instructions
 

  1. Prepare Ingredients: Shred the cabbage and chop the scallions.
  2. Stir-fry Cabbage: Heat oil in a frying pan over medium heat. Stir-fry the cabbage until it softens. Season with salt and pepper, then transfer to a plate.
  3. Make Egg Mixture: In a bowl, combine the eggs, potato starch, water, and salt. Mix well.
  4. Cook Egg: Heat oil in a frying pan over medium heat. Pour in the egg mixture and cook.
  5. Assemble Tonpeiyaki: Place a sheet of plastic wrap on a flat surface. Lay the cooked egg on the wrap, add the stir-fried cabbage on top, and then wrap it to shape.
  6. Serve: Drizzle with chuno sauce and mayonnaise, then top with chopped scallions.
