  • 1 Medium frying pan 22 cm, 8.7 inches

Ingredients

  • 1 Onion, 3.5 oz
  • ½ Scallion
  • 3 Eggs
  • ½ Cup Water
  • 2 Tbsp Mirin
  • 2 Tbsp Soy sauce
  • ½ tsp Kombu Dashi powder
  • 2 servings Cooked Rice, 10oz, 300g

Instructions

  • Prepare vegetables: Slice onion thinly and chop scallion.
  • Beaten egg: In a small bowl, crack the egg and beat it.
  • Simmer onion: In a medium frying pan, add water, mirin, soy sauce, dashi powder, and sliced onion and boil over medium heat.
  • Simmer: Reduce the heat to low and simmer for 5 minutes or until the onion is tender.
  • Add egg: Gently pour the beaten egg into the pan and continue to cook until egg is cooked through.
  • Serve: Place the cooked rice in a bowl and place the egg mixture on top. Add chopped scallions for the garnish.
