Instructions

  • Prepare ingredients: Slice garlic, cut cherry tomatoes in half, and slice asparagus diagonally. Remove seeds of dried red chill pepper and slice it. Drain the oil of canned tuna.
  • Boil Pasta: Put water and salt in a pot and bring to a boil. Add pasta and boil it according to the package.
  • Make the Sauce: While pasta is cooking, put olive oil, garlic and dried chill pepper in a frying pan on low heat. Once you smell the aroma of garlic, add cherry tomatoes and canned tuna.
  • Boil Asparagus: Put asparagus to the pot two minutes before the pasta is finished cooking.
  • Combine: Transfer cooked pasta, asparagus and pasta water to the frying pan and mix the whole. Adjust the taste with salt and pepper.

    Loved it!! I did use a high-quality tuna from a glass jar. Made it a one-pot dish by making the sauce in the same pot as used for cooking the pasta and asparagus. If you cover them after you pour them into the colander, they don’t dry out. I scooped up some pasta water before draining to use in the sauce.
    I didn’t have a fresh chili on hand so used red pepper flakes.
    Before serving, finished it with a bit of fresh-grated parmesan and pepper.
