You’ll need the following ingredients to make this Creamy Miso Pasta:

  • Miso Cream Sauce: Made with miso paste, soy milk, and cream. For the best flavor, use fresh, high-quality miso paste. I recommend using white miso (shiro miso) for a milder taste, as used in this recipe. You can substitute with red miso (aka miso) for a deeper, richer flavor.
  • Vegetables: This recipe includes spinach and shimeji mushrooms, but you can easily substitute other vegetables such as cabbage, bell peppers, zucchini, eggplant, and mushroom varieties like shiitake mushrooms. Adjust based on what you have on hand!

If you’re vegan, swap the cream with coconut cream for a dairy-free version.

Equipment

  • Large pot
  • Large Frying Pan

Ingredients
  

  • 1 Spinach, 80g
  • 1 cup Shimeji Mushrooms, 130g
  • 2 servings Long Pasta, 160-200g
  • 1 tsp Salt, for cooking pasta
  • 1 Tbsp Olive Oil
  • Black Pepper, optional
Miso Cream Sauce
  • 2 Tbsp Miso Paste
  • ½ cup Soy Milk, 120ml
  • ¼ cup Cream, 60ml

Instructions
 

  1. Prepare the Ingredients: Wash the spinach and cut it into bite-sized pieces. Trim the ends of the shimeji mushrooms and separate them into each piece.
  2. Make the Miso Cream Sauce: In a small bowl, whisk together the miso paste, soy milk, and cream until smooth. Set aside.
  3. Cook the Pasta: Fill a large pot with water, add the salt, and bring it to a boil. Cook the pasta according to the package instructions. Reserve some pasta cooking water, then drain the pasta.
  4. Stir-Fry the Vegetables: Heat a frying pan over medium heat and add olive oil. Sauté the spinach and shimeji mushrooms for a few minutes until tender.
  5. Combine Everything: Pour the miso cream sauce into the pan and gently simmer it. Add the cooked pasta and toss well to coat. If the sauce is too thick, gradually add some reserved pasta water.
  6. Serve: Plate the pasta and garnish with black pepper to your taste. Serve hot and enjoy!
