Here are the ingredients (amounts are in the recipe card below).

- Atsuage: If you can’t find atsuage at a store, you can use momen tofu (firm tofu). In that case, press the tofu firmly and remove the moisture before using it.
- Scallion: It’s for garnish. You can substitute it with other green vegetables such as green onion and parsley.
- Teriyaki sauce: Mirin and soy sauce. Some recipes add sake and sugar, but I simplify by adding only mirin and soy sauce. If you prefer sweet teriyaki sauce, feel free to add sugar.
- Flour: Any type of flour is ok. You can use corn starch or potato starch also.

- Cut ingredients: Cut atsuage into bite-size pieces and chop scallions. (If atsuage is greasy, press with a paper towel to remove extra fat.)
- Coat with flour: Put atsuage and flour into a bowl, and mix by hand. (Coating with flour make it easy to soak teriyaki sauce well.)
- Pan-fry atsuage: Add oil to a frying pan, place atsuage, and pan-fry for 2 minutes over medium heat until crispy.
- Pan-fry atsuage: Flip them over and pan-fry for another 2 minutes.
- Teriyaki sauce: Add mirin and soy sauce to the pan, bring to a boil, stir quickly, and turn off the heat. (After adding the teriyaki sauce, it will be easy to burn, so please cook quickly.)
- Scallions: Add chopped scallions and toss lightly.
