Lotus Root Salad With A Japanese Twist

- Prepare vegetables: Peel the lotus root and carrot, and slice them thinly using a slicer. Soak the slices in water for 5 minutes and drain. Meanwhile, rinse the lettuce and cut it into small, bite-sized pieces.
- Blanch: Blanch the lotus root and carrot slices in boiling water for a couple of minutes until they are slightly tender but still have a crunch. Drain and let them cool.
- Assemble the salad: Put the lotus root, carrot, and lettuce in a large bowl, and add mayonnaise, soy sauce, rice vinegar, ground sesame seeds, and sugar. Toss the ingredients thoroughly to ensure an even coating of the dressing on all the vegetables.

- Lotus roots turn black when cut and exposed to air. To prevent this discoloration, soak them in water or vinegar water for about 5 minutes immediately after cutting.
