Equipment

  • Small Saucepan
  • Medium frying pan

Ingredients
  

  • โ…“ Daikon, diced
  • ยฝ Onion, chopped
  • 1 tsp Garlic, grated
  • 1 tsp Ginger, grated
  • ยฝ cup Lentils
  • 1 Tbsp Vegetable Oil
  • 1 Tbsp Curry Powder
  • 1ยฝ Tbsp Wheat Flour
  • 1 cup Water
  • 1 Tbsp Ketchup
  • 1 Tbsp Soy Sauce
  • 1 Tbsp White Miso Paste, or honey
  • Salt, to taste
  • Cooked Rice, for serving

Instructions
 

  1. Prepare Ingredients: Peel and dice the daikon. Chop the onion. Grate the garlic and ginger.
  2. Cook the Lentils: Cover the lentils with water in a small saucepan and boil for 10โ€“12 minutes until tender. Drain and set aside.
  3. Sautรฉ the Vegetables: Heat oil in a frying pan over medium heat. Add daikon and onion and cook until the daikon becomes slightly translucent.
  4. Add Seasonings: Lower the heat. Add the cooked lentils, grated garlic, ginger, curry powder, and flour. Stir well to coat everything evenly.
  5. Simmer the Curry: Pour in the water, then add ketchup, soy sauce, and miso paste. Stir to combine. Simmer on low heat for 10 minutes or until the daikon is tender. Taste and adjust salt if needed.
  6. Serve: Serve hot over the cooked rice. Enjoy!
