  • Tomato: Use cherry tomatoes in this recipe, but a regular ripe tomato can also be used.
  • Avocado: Use a ripe avocado that’s soft but not mushy for the best texture.
  • Shio Koji: A fermented Japanese seasoning made from rice koji and salt, adding natural umami and mild sweetness. If you donโ€™t have shio koji, substitute with โ…“ teaspoon of salt.

Ingredients
  

  • 10 Cherry Tomatoes
  • 1 Avocado
  • 1 Tbsp Shio Koji
  • Black Pepper, to taste

Instructions
 

  1. Prepare the Ingredients: Halve the cherry tomatoes and cut the avocado into bite-sized pieces. Place them in a bowl.
  2. Combine and Serve: Add the shio koji to the tomatoes and gently toss to coat. Transfer to a serving bowl and sprinkle with black pepper to taste. Enjoy!
