About this recipe

  • Crispy fries using Japanese sweet potatoes
  • Simple recipe with three ingredients
  • Enjoy the naturally sweet flavor
  • Flavor variations

📋 Ingredients

Here are the ingredients (amounts are in the recipe card below).

Ingredients for Japanese sweet potato fries.
  • Japanese sweet potatoes: See below.
  • Oil: I use olive oil for this recipe, but you can use vegetable oil, canola oil, or any oil.
  • Salt: I prefer sea salt, but any salt will work.

Japanese Sweet Potatoes

Japanese sweet potatoes.

Japanese sweet potatoes, also known as satsumaimo, are easily distinguished by their burgundy skin and yellowish-white flesh.

They are typically firmer and starchier than orange sweet potatoes, which makes them an excellent choice for roasting, grilling, or using in soups and stews, as they hold their shape well during cooking.

Japanese sweet potatoes are versatile and commonly used in sweet and savory dishes in Japanese cooking. Some popular dishes are sweet potato tempura, yaki imo (roasted sweet potato), daigaku imo, and baked treats.

🔪Instructions

Let me walk you through how to make it!

  1. Cut the sweet potatoes into sticks and soak for 5 minutes.
  2. Drain the sweet potatoes with a paper towel.
  3. Pan-fry until golden brown and crispy.
  4. Pan-fry the other side.
  5. Transfer to a baking tray.

Step 1

Slices of Japanese sweet potatoes on a cutting board.

Cut the sweet potato into equal size sticks and place them in a large bowl.

Japanese sweet potato sticks are soaked in a bowl of water.

Add enough water to cover the sweet potatoes and soak for 5 minutes.

Step 2

Japanese sweet potato sticks are placed on a paper towel.

Drain and remove excess water from the sweet potatoes with a paper towel.

Step 3

Pan-fry Japanese sweet potato sticks.

Heat the oil in a frying pan over medium-high heat. Once the oil is hot, add the sweet potatoes and deep fry for 5 minutes or until golden brown and crispy.

Step 4

Pan-fry Japanese sweet potato sticks.

Flip the sweet potatoes over to ensure that both sides become crunchy.

Step 5

Pan-fried Japanese sweet potato sticks are on a sheet pan.

Transfer the fried sweet potatoes to a sheet pan with a rack to drain excess oil.

Serve

Serve the Japanese sweet potato fries on a plate and sprinkle salt to your taste. Pair them with ketchup or your favorite dipping sauce for added flavor.

Enjoy the satisfying crunch and natural sweetness!

Helpful Tips

  • The Japanese sweet potato skins are edible and contain valuable nutrients, just like other varieties of sweet potatoes. Therefore, I recommend consuming sweet potatoes with the skin on. However, if you do not enjoy the skin's texture, peel it off.
  • Soaking sweet potatoes can not only help to remove the bitterness but also help to prevent the color from changing or darkening.

Variations

Japanese sweet potato fries.

You can experiment with different flavor variations, such as adding spices or herbs to create a unique twist on this simple dish!

  • Black pepper
  • Chili powder
  • Garlic powder
  • Onion powder
  • Curry powder
  • Dried parsley
  • Dried thyme
