Tamarizuke: The Rich, Flavorful Pickles of Nikko

Today, I want to introduce you to Tamarizuke!

Nikko (日光), a popular tourist destination about three hours by train from Tokyo, is well-loved by both domestic and international travelers. One of its famous local specialties is this Tamarizuke. I first heard it through social media and immediately wanted to try it! So, I ordered some online to experience their unique, delicious flavor.

What Is Tamarizuke?

Tamarizuke is a Japanese pickle made by soaking vegetables in “Tamari,” the liquid that rises to the top during the miso fermentation process.

Miso paste one month.

This Tamari, also known as “Miso Tamari (like the picture above),” is a rare and highly concentrated umami extract that forms naturally as miso ferments. Since only a tiny amount can be collected, most commercially available Tamarizuke are made using a seasoned Tamari mixture that includes soy sauce and mirin. (Note: This differs from Tamari Soy Sauce, which is made from soybeans, wheat, and salt.)

Trying 3 Tamarizuke

I ordered three varieties from the Uwasawa Umetaro shop, a well-known Tamarizuke brand in Nikko. (They also run a restaurant offering Japanese-style breakfast! It looks amazing!) Here’s what I got from the shop:

Rakkyo tamarizuke.

Rakkyo tamarizuke

Uwasawa’s most popular item! These sweet Tamarizuke are made with crunchy Japanese shallots (rakkyo) and have a delightful balance of mild sweetness and refreshing acidity from the added vinegar.

Ginger tamarizuke.

Ginger Tamarizuke

Thinly sliced ginger marinated in sweet Tamari. The combination of refreshing spiciness and mild sweetness makes it perfect as an onigiri (rice ball) filling!

7 veggie tamarizuke.

Seven-Vegetable Tamarizuke

A mix of seven finely chopped vegetables, including daikon radish, cucumber, and eggplant, all marinated in Tamari. This is an excellent option for families to enjoy together!

How to Enjoy Tamarizuke

The classic way to enjoy Tamarizuke is with a simple bowl of white rice!

Other ways to use them include:

  • As a topping for ochazuke (rice with tea poured over it)
  • Chopped and used as an onigiri filling or seasonings for hiyayakko
  • Mixed into salad dressings for extra umami

These versatile pickles can enhance a variety of dishes!

Final Thoughts

Tamarizuke offers a rich, deep umami flavor that enhances any meal. Whether as a side dish, a condiment, or a key ingredient in your favorite recipes, they’re a fantastic way to experience traditional Japanese flavors.
