Cucumber stir-fry ingredients.
  • Japanese Cucumbers: Slim and crisp with a refreshing texture. You can substitute Persian or English cucumbers.
  • Tofu: Use firm tofu and drain well before cooking to avoid excess moisture in the pan.
  • Vegetable Oil: Any neutral oil works. I use rice oil in this recipe.
  • Sake: Adds subtle sweetness, umami, and a pleasant aroma. If you don’t have sake on hand, you can substitute it with water.
  • Oyster Sauce: Rich, savory, and slightly sweet sauce that brings everything together. For a plant-based option, use mushroom-based oyster sauce or a mix of soy sauce and a touch of sugar.
