This stir-fried cucumber is a tasty side dish with a satisfying crunch and the fragrant flavor of oyster sauce. If you’re tired of cucumber salad, try stir-frying it for a fresh, delicious twist!

Instructions
Prep the Ingredients: Cut the cucumber in half lengthwise, scoop out the seeds with a spoon, then slice diagonally. Drain the tofu and cut it into bite-sized cubes.
Stir-Fry the Cucumber: Heat the oil in a frying pan over medium heat. Add the cucumber slices and stir-fry for 2–3 minutes until slightly softened. Remove and set aside.
Cook the Tofu: In the same pan, add the tofu and cook until golden brown on both sides, about 3–4 minutes per side.
Add Sauce and Combine: Return the cucumber to the pan. Add the sake and oyster sauce, and stir gently to coat the ingredients evenly.
Serve: Transfer to a plate and enjoy!
Notes
For a crunchier texture, scoop out and discard the cucumber’s soft, moist seeds.
Cook the tofu first, then add it to the stir-fry with the other ingredients. This helps prevent it from falling apart.
You can also add colorful vegetables like carrots and bell peppers for variety.
