Harusame salad ingredients.
  • Harusame Noodles: These thin, transparent glass noodles are light and soak up flavors beautifully. Made from starch, they’re perfect for cold salads. You can also substitute with rice noodles or regular long pasta noodles.
  • Cucumber and Carrot: Add a refreshing crunch and vibrant color. Feel free to include other crisp vegetables like bean sprouts, lettuce, or thinly sliced daikon.
  • Dressing: A classic Japanese-style dressing made with soy sauce, sesame oil, rice vinegar, and sugar. It’s tangy, savory, and slightly sweet—perfect for light salads.

Recipe Tips

  • Drain the harusame noodles thoroughly after boiling to prevent the salad from becoming watery. If the noodles are too long, cut them into bite-sized pieces.
  • You can start by pouring half of the dressing, then taste it, and add more if needed to suit your preference.
  • Chill the salad in the fridge for at least 30 minutes to allow the flavors to meld and make it extra refreshing.

What To Serve With

To complement this salad, I recommend serving it with vegetable gyoza, umeboshi miso soup, and tuna mayo onigiri!
