    It's a healthy stir fry dish that atsuage is crispy, napa cabbage is soft and nice and finished with flavorful Japanese seasonings. The aroma of miso is so inviting!

    Stir fry recipe often includes meat (mostly pork), but we substitute it with Atsuage (tofu product) and make it vegan and vegetarian-friendly.

    Ingredients for Japanese Napa Cabbage Miso Stir-fry
    • Napa cabbage
    • Green onion
    • Atsuage: It's deep-fried tofu which has a firm texture and more chewy than tofu. You can also use Aburaage, which is deep-fried thin tofu.
    • Flour: Any wheat flour is ok. You can also use potato starch or corn starch.
    • Sesame oil: You can use any oil you have, but sesame oil adds a nice aroma, so I highly recommend using it for this recipe.
    • Seasonings: Miso, Mirin, Sake

    How to make Japanese Napa Cabbage Miso Stir-fry
    1. Prepare vegetables: Cut napa cabbage into 1 cm widths and slice green onion diagonally.
    2. Prepare atsuage: Cut Atsuage in half of the thickness, cut into strips, season with salt, and coat them with flour. (Atsuage has a plain taste, but coating it with flour makes it soak the sauce well, and the taste becomes richer.)
    3. Pan fry Atsuage: Add sesame oil to a frying pan, cook the Atsuage on medium heat for a few minutes until both sides are crispy, and then take them out to a plate.
    4. Stir Fry vegetables: Add the white part (the hard part) of napa cabbage and green onion to a frying pan, stir fry quickly, add a little water, cover, and steam for 3 minutes. (white part of napa cabbage and green onion is harder, so it is better to cook them separate from their leaves)
    5. Stir fry vegetables: Add leaves of napa cabbage and green onion, stir fry quickly, cover and steam for another 2 minutes.
    6. Add miso sauce: Put the atsuage back in, add the mixed miso sauce, and stir.

    Ingredients
      

    • ⅛ Napa cabbage, 300g
    • ½ Green onion
    • 1 Atsuage , 170g
    • pinch of Salt, seasoning for atsuage
    • 1 tablespoon Flour
    • 1 tablespoon Sesame oil

    Miso sauce (mix them beforehand)

    • 2 tablespoon Miso
    • 2 tablespoon Mirin
    • 1 tablespoon Sake

    Instructions

    • Prepare ingredients: Cut napa cabbage into 1 cm widths and slice green onion diagonally. Cut Atsuage in half of the thickness, cut into strips, season with salt, and coat them with flour.

    • Substitute: You can substitute potato starch or corn starch for flour. Carrots, spinach, bean sprouts would be great, too, instead of green onion.
