  • Vegan recipe

📋 Ingredients

Here are the ingredients (amounts are in the recipe card below).

Ingredients for Japanese Napa Cabbage Miso Stir-fry
  • Napa cabbage
  • Green onion
  • Atsuage: It’s deep-fried tofu which has a firm texture and is more chewy than tofu. You can also use Aburaage, which is deep-fried thin tofu.
  • Flour: Any wheat flour is ok. You can also use potato starch or corn starch.
  • Sesame oil: You can use any oil you have, but sesame oil adds a nice aroma, so I highly recommend using it for this recipe.
  • Seasonings: Miso, Mirin, Sake

🔪Instructions

Ok, let me walk you through how to make it step by step. You can also watch this video.

How to make Japanese Napa Cabbage Miso Stir-fry
  1. Prepare vegetables: Cut napa cabbage into 1 cm widths and slice green onion diagonally.
  2. Prepare atsuage: Cut Atsuage in half of the thickness, cut into strips, season with salt, and coat them with flour. (Atsuage has a plain taste, but coating it with flour makes it soak the sauce well, and the taste becomes richer.)
  3. Pan fry Atsuage: Add sesame oil to a frying pan, cook the Atsuage on medium heat for a few minutes until both sides are crispy, and then take them out to a plate.
  4. Stir Fry vegetables: Add the white part (the hard part) of napa cabbage and green onion to a frying pan, stir fry quickly, add a little water, cover, and steam for 3 minutes. (white part of napa cabbage and green onion is harder, so it is better to cook them separate from their leaves)
  5. Stir fry vegetables: Add leaves of napa cabbage and green onion, stir fry quickly, cover and steam for another 2 minutes.
  6. Add miso sauce: Put the atsuage back in, add the mixed miso sauce, and stir.

  1. Hello! I think that there is a labelling error – the Tofu has “Carrot”. I am going to try this on the weekend but not sure if I can get Atsuage but I will use an alternative :).
