What is Tempeh

Tempeh is an Indonesian fermented food made by fermenting boiled soybeans. We often compare it to natto as it is also fermented soybeans, but tempeh is more versatile and not sticky like natto, nor does it have a strong smell.

Since it’s a soybean product, it’s nutritious and rich in high-quality protein, vitamin B, dietary fiber, and more.

It is typically sold in the form of a plate-like the picture above (this one is 500g/17cmx17cm). The soybeans are covered with white mycelium, holding the beans together so they will not fall apart, even if you cut them into thin slices.

It has a firm texture, and the taste is light. It doesn’t have much smell, but some people don’t like the smell, so in that case, it is good to cook with garlic or ginger.

  • Vegetables: Onion, green pepper, eringi mushrooms
  • Teriyaki sauce: Soy sauce, mirin, sake, sugar
  • Flour

If you live in Japan, I would recommend this: Motai tempeh 500g

Tempeh you find in the grocery store is the smaller size in most cases and not enough quantity for me, so I often buy in bulk at Motai Tempeh’s online store. You can also purchase it on Amazon.

It’s made from Japanese soybeans and has a plain taste. It will be delivered frozen so you can keep it in the freezer for a long time (one year from the manufacture date).

How to make Tempeh Stir Fry in Japanese Teriyaki Sauce
  1. Cut ingredients: Slice onion, eringi, tempeh, and cut green peppers into strips
  2. Coat tempeh with flour: Mix flour and tempeh by hand to coat tempeh with flour all over
  3. Make teriyaki sauce: Blend all the sauce ingredients in a bowl
  4. Fry tempeh: Warm a frying pan, add a generous amount of oil, and fry tempeh on medium heat until golden brown (1-2 minutes on one side), then transfer to a plate.
  5. Stir fry vegetables: In the same frying pan, add some oil and stir fry onions → peppers, → eringi in that order.
  6. Toss with sauce: Put the tempeh back, pour the sauce over, and stir fry until the sauce thickens

Here you go! The tempeh is crispy and chewy. And it’s well blended with the sauce as it’s coated with flour. Delicious!

Store in the fridge, and it will last for 3 days.

How to Eat

You can eat it as it is, but it would also be great to serve with other dishes. Here is how I like to eat it.

  • Japanese meal set: Serve with Japanese steamed rice, tofu salad and miso soup
  • Rice bowl: Put it on rice, and top with shredded nori seaweed or chopped scallion
  • Udon noodles: Put it on boiled udon noodles, pour some mentsuyu(Japanese noodle soup)
  • Quinoa: Serve with quinoa and steamed vegetables

Variations of ingredients

You can use your favorite one if you don’t have the vegetables according to the recipe. These vegetables are also great for this recipe.

Ingredients
  

  • 1 c Tempeh, 120g
  • 2 Eringi mushroom, 120g
  • 1/2 Onion, 140g
  • 2 Green peppers, 50g
  • 1 Tbsp Flour
Teriyaki Sauce
  • Tbsp Soy sauce
  • Tbsp Mirin
  • Tbsp Sake
  • 1 tsp Sugar

Instructions
 

  1. Cut ingredients: Slice onion, eringi, tempeh, and cut green peppers into strips
  2. Coat tempeh with flour: Mix flour and tempeh by hands to coat tempeh with flour all over
  3. Make a teriyaki sauce: Blend all the sauce ingredients in a bowl
  4. Pan fry tempeh: Warm a frying pan, add a generous amount of oil and pan fry tempeh over medium heat until golden brown(1-2 minutes on one side), then transfer to a plate.

  • Storage: It will last for 3 days in the fridge.
  • Substitute: These vegetables are also great for this recipe: Shiitake mushrooms, broccoli, eggplant, green peas, cabbage, bean sprout. You can substitute flour with rice flour, or corn starch.
