Sweet potato and lotus root with sweet sour sauce ingredients.
  • Japanese sweet potato: Choose firm sweet potatoes with smooth skin and no bruises or soft spots. If you’re not sure which one to choose, check out my guide to the different types of Japanese sweet potatoes.
  • Lotus root: Pick a fresh lotus root that is heavy, thick, plump, and has glossy skin with no scratches.
  • Potato starch: This helps thicken the sauce. If you don’t have it, cornstarch works just fine.
  • Sauce: This simple sauce is made with soy sauce, rice vinegar, and sugar. Apple cider vinegar or white vinegar works well if rice vinegar isn’t available.
