Sweet Potato & Lotus Root with Sweet and Sour Sauce

This sweet potato and lotus root dish is simple to make and packed with flavor. It’s great for bento boxes or an easy dinner side, and once you start eating, it’s hard to stop!
Sweet potato and lotus root with sweet sour sauce.

Equipment

  • Medium frying pan

Ingredients
  

  • ½ Sweet Potato
  • ½ Lotus Root, about 100g
  • Vegetable Oil, for pan frying
  • 1 Tbsp Potato Starch
Sweet & Sour Sauce
  • 2 Tbsp Soy Sauce
  • 2 Tbsp Rice Vinegar
  • 1 Tbsp Sugar

Instructions
 

  1. Prepare the vegetables: Slice the sweet potato and lotus root into small pieces.
  2. Cook the sweet potato: Place the sweet potato in a frying pan and add enough water to cover. Bring to a boil and cook until just tender. Drain and set aside.
  3. Fry the lotus root: Heat oil in the same frying pan over medium heat. Lightly coat the lotus root with potato starch and fry until crispy.
  4. Return the sweet potato: Add the sweet potato back to the pan and lightly fry.
  5. Add the sauce: In a small bowl, mix the soy sauce, vinegar, and sugar. Pour into the pan and toss quickly to coat the vegetables evenly, letting the sauce lightly glaze them.
  6. Serve: Transfer to a plate and sprinkle with sesame seeds for garnish.
