    • Soy milk: While soy milk is my preferred choice, you can substitute it with other dairy-free options such as coconut milk, almond milk, or even heavy cream to add an extra creamy texture.
    • Salt: I prefer using sea salt, but any type of salt is acceptable

    Japanese Sweet Potatoes

    Japanese sweet potatoes, also known as satsumaimo, have distinct reddish-purple skin and yellowish-white flesh that sets them apart from white potatoes, orange sweet potatoes, and regular sweet potatoes.

    They are a common ingredient in Japanese cuisine for sweet and savory dishes, including tempura, yaki imo (roasted sweet potato), and baked treats.

    1. Preparation for the sweet potato.
    2. Steam them.
    3. Mash them.
    4. Add the milk and salt and mash.

    Peel the sweet potato, cut them into pieces evenly, and place them in a medium-sized bowl. Add enough water to cover the sweet potatoes and soak for 5 minutes.

    Bring water to a boil in a large pot over medium heat, and place the sweet potatoes in a steamer basket.

    Cover it with a lid. Steam them until tender over low heat, about 5-7 minutes.

    Transfer the steamed sweet potatoes to a large bowl.

    Use a potato masher or fork to mash.

    Step 4

    Add the soy milk and a pinch of salt to taste to the bowl and continue mashing until the sweet potatoes are smooth and creamy. Alternatively, you can use a food processor for quicker and easier results.

    Transfer mashed Japanese sweet potatoes to an airtight container and keep them in the fridge. Good for 3 to 4 days.

    Helpful tips

    • Soaking sweet potatoes can not only help to remove the bitterness but also help to prevent the color from changing or darkening.
    • Japanese sweet potatoes have edible skins packed with nutrients like other sweet potato varieties. However, peel the sweet potatoes for this recipe to achieve a creamy texture and nice color.
    • If your sweet potato doesn't quite have the desired sweetness, add maple syrup or brown sugar to enhance the flavor.

    • 2 tablespoon Soy Milk, or your choice of milk
    • Salt to taste
