Mashed Japanese Sweet Potato Recipe

Ingredients
Instructions
- Preparation: Peel the sweet potato, cut them into evenly sized pieces, and place them in a medium-sized bowl. Add enough water to cover the sweet potatoes and soak for 5 minutes.
- Steam: Bring water to a boil in a pot, place the sweet potatoes in a steamer basket, and cover it with a lid. Steam them until they are tender, about 5-7 minutes.
- Mash: Transfer the sweet potatoes to a large mixing bowl and use a potato masher or fork to mash.
- Mash more: Add the milk and salt to taste to the bowl and continue mashing until the sweet potatoes are smooth and creamy.
Notes
- Storage: Transfer mashed Japanese sweet potatoes to an airtight container and keep them in the fridge. Good for 3 to 4 days.
- Soaking sweet potatoes can not only help to remove the bitterness but also help to prevent the color from changing or darkening.
- Japanese sweet potatoes have edible skins packed with nutrients like other sweet potato varieties. However, peel the sweet potatoes for this recipe to achieve a creamy texture and nice color.
- Add maple syrup or brown sugar to enhance the flavor if your sweet potato doesn’t have the desired sweetness.
