  • Shiitake Mushrooms: Use fresh shiitake mushrooms. They’re often available at Japanese or other Asian grocery stores. If you can’t find them, portobello mushrooms make a great substitute.
  • Oil for Frying: Any neutral oil is ok, such as vegetable or canola oil. I use rice bran oil in this recipe.
  • Tempura Batter: This simple batter is made with cold water, cake flour (or all-purpose flour), and egg. For gluten-free or vegan variations, check out this tempura batter recipe.

Equipment

  • Medium frying pan

Ingredients
  

  • 8 Shiitake Mushrooms
  • Vegetable Oil, for frying
  • Mentsuyu, for diping
Tempura Batter
  • 1 Egg
  • ½ cup Cold Water
  • ½ cup Wheat Flour

Instructions
 

  1. Prepare the Shiitake: Remove the stems from the caps and trim off the tough stem tips.
  2. Make the Batter: In a bowl, lightly beat the egg. Add cold water and flour, then gently mix until just combined (a few lumps are fine).
  3. Fry the Tempura: Heat oil in a frying pan to 170°C (340°F). Lightly dust the shiitake with flour, dip them into the batter, and carefully place them into the hot oil. Fry until crisp, then transfer to a wire rack or paper towels to drain excess oil.
  4. Serve: Arrange the tempura on a plate. Prepare the dipping sauce by diluting mentsuyu with water as directed on the bottle. Dip the tempura and enjoy right away while it’s hot and crispy!
