Natto Egg Toast (Vegetarian)

- 2 slices White bread
- 1 Natto, 50g/1.8oz (use the attached natto sauce)
- 2 Eggs
- 1 tsp Parsley
- 1 Tbsp Mayonnaise
- Salt and pepper to taste
Instructions
- Chop parsley: Finely chop the parsley.
- Make hard-boiled eggs: Put eggs and water in a pot and bring to a boil. Lower the heat and cook for 10 minutes, drain the water and add cold water and ice.
- Mix natto: Add the natto sauce and mix natto
- Season eggs: Peel the eggs, mash them in a bowl, and season with salt and pepper, mayonnaise, and parsley.
- Combine ingredients: Spread boiled eggs and natto on bread and add some mayonnaise.
- Toast: Toast the bread in an oven (I use a fish grill) until brown for 5-7 minutes.

- If your natto doesn’t come with sauce, you can use soy sauce, or make it on your own by mixing soy sauce, dashi and sugar.
- You can use any type of bread you like.
