Daikon Spicy Miso Sauce ingredients.
  • Daikon: Choose a firm, heavy, shiny daikon. Its flavor and texture can vary depending on which part you use. Learn more in How to Cook Daikon Radish.
  • Tofu: Both firm and silken tofu work well.
  • Spicy Miso Sauce: This savory, spicy sauce is made with dashi, mirin, soy sauce, miso, doubanjiang, garlic, and ginger.
  • Sesame Oil: Use it to stir-fry the tofu and daikon. It adds a nice toasted flavor, but you can use another cooking oil if you prefer.
  • Potato Starch: Mix it with water, then add it at the end to thicken the sauce. Cornstarch works well too.

Recipe Tips

  • No need to press the tofu. Since you’ll crumble and stir-fry it, just drain off any excess water.
  • Adjust the flavor to your taste. Add a little more miso for a saltier, more savory flavor, or more doubanjiang for extra heat.
  • Add the potato starch mixture gradually. The sauce thickens quickly, so you may not need to use it all.

What To Serve With

I recommend serving this dish over a bowl of rice. It also goes well with a simple egg drop soup, refreshing spinach ohitashi, and fresh napa cabbage pickles.

Ingredients

  • ⅓ daikon radish, about 250-300g
  • 150 g tofu, drained
  • 1 scallion, finely chopped
  • 1 Tbsp sesame oil
For the sauce
  • 1 tsp kombu dashi powder

  • ½ tsp doubanjiang, spicy chili bean paste
  • ½ tsp grated garlic
  • ½ tsp grated ginger
  • 1 cup water
To Thicken the Sauce
  • ½ Tbsp potato starch

Instructions

  1. Preparation: Cut the daikon into 1.5 cm cubes. Finely chop the scallion. Mix all the sauce ingredients in a bowl.
  2. Stir-fry: Heat the sesame oil in a frying pan over medium heat. Crumble the tofu into the pan and stir-fry until most of its moisture has cooked off. Add the daikon and stir-fry briefly.
  3. Simmer: Pour in the sauce. Bring it to a simmer, then cook over medium heat for about 10 minutes, until the daikon is tender.
  4. Thicken the sauce: Reduce the heat to low, mix the potato starch and water, then gradually pour it into the pan while stirring. Cook until the sauce thickens.
  5. Serve: Transfer it to a bowl and top with chopped green onion.
