This simmered daikon recipe is a must-try for daikon lovers! It’s a simple, flavorful dish of daikon and tofu simmered in a savory miso sauce with a little kick.
Preparation: Cut the daikon into 1.5 cm cubes. Finely chop the scallion. Mix all the sauce ingredients in a bowl.
Stir-fry: Heat the sesame oil in a frying pan over medium heat. Crumble the tofu into the pan and stir-fry until most of its moisture has cooked off. Add the daikon and stir-fry briefly.
Simmer: Pour in the sauce. Bring it to a simmer, then cook over medium heat for about 10 minutes, until the daikon is tender.
Thicken the sauce: Reduce the heat to low, mix the potato starch and water, then gradually pour it into the pan while stirring. Cook until the sauce thickens.
Serve: Transfer it to a bowl and top with chopped green onion.
Notes
No need to press the tofu. Since you’ll crumble and stir-fry it, just drain off any excess water.
Adjust the flavor to your taste. Add a little more miso for a saltier, more savory flavor, or more doubanjiang for extra heat.
Add the potato starch mixture gradually. The sauce thickens quickly, so you may not need to use it all.
