This Creamy Miso Pasta is a quick and satisfying dish with a savory umami kick. It's perfect for busy weeknight dinners and a great way to use miso paste if you're unfamiliar with traditional Japanese recipes!

Equipment

  • Large pot
  • Large Frying Pan

Ingredients
  

  • 1 Spinach, 80g
  • 1 cup Shimeji Mushrooms, 130g
  • 2 servings Long Pasta, 160-200g
  • 1 tsp Salt, for cooking pasta
  • 1 Tbsp Olive Oil
  • Black Pepper, optional
Miso Cream Sauce
  • 2 Tbsp Miso Paste
  • ½ cup Soy Milk, 120ml
  • ¼ cup Cream, 60ml

Instructions
 

  1. Prepare the Ingredients: Wash the spinach and cut it into bite-sized pieces. Trim the ends of the shimeji mushrooms and separate them into each piece.
  2. Make the Miso Cream Sauce: In a small bowl, whisk together the miso paste, soy milk, and cream until smooth. Set aside.
  3. Cook the Pasta: Fill a large pot with water, add the salt, and bring it to a boil. Cook the pasta according to the package instructions. Reserve some pasta cooking water, then drain the pasta.
  4. Stir-Fry the Vegetables: Heat a frying pan over medium heat and add olive oil. Sauté the spinach and shimeji mushrooms for a few minutes until tender.
  5. Combine Everything: Pour the miso cream sauce into the pan and gently simmer it. Add the cooked pasta and toss well to coat. If the sauce is too thick, gradually add some reserved pasta water.
  6. Serve: Plate the pasta and garnish with black pepper to your taste. Serve hot and enjoy!

Notes

  • If the sauce is too thick, add a bit of the reserved pasta cooking water to thin it out. This will also help the sauce toss better with the pasta.
  • Stir-fry the spinach and shimeji mushrooms until tender to preserve their texture.
  • For added flavor, garnish with toasted sesame seeds, chopped green onions, or a drizzle of olive oil.
