- Prepare the Ingredients: Chop green bell peppers and shiitake mushrooms. Grate the ginger.
- Prepare the Sauce: In a small bowl, combine the miso paste, soy sauce, and water. Mix well to create a smooth sauce.
- Cook Vegetables: Heat the oil in a large frying pan over medium heat. Add the chopped bell peppers, shiitake mushrooms, and grated ginger. Cook for about 5 minutes until tender.
- Add Tofu: Add the tofu to the pan and cook for about 5 minutes, stirring constantly.
- Add the Sauce: Pour the sauce over the tofu in the pan and stir until the tofu is evenly coated.
- Sesame seeds: Sprinkle toasted sesame seeds over the tofu scramble for extra flavor and texture.
Notes
- Storage: Store in an airtight container and keep it in the refrigerator. It will be suitable for 2 to 3 days.
- Opt for firm or extra-firm tofu for a scramble. Silken tofu is too soft and won’t hold its shape well.
