Ingredients for vegan tofu scramble.
  • Tofu: Firm (momen) or extra firm tofu, medium-firm tofu is preferred. If you like a dry texture of scramble, press tofu and remove the excess moisture.
  • Bell pepper: I use green bell pepper, but you can use red bell pepper, green onions, fresh spinach, or any of your favorite vegetables in this recipe to add color and flavor.
  • Shiitake mushrooms: I use them to add a chewy texture to the tofu scramble, but you can use other types of mushrooms or omit them according to your preference.
  • Ginger
  • Miso paste: See below.
  • Soy sauce
  • Oil for cooking: You can use olive oil, vegetable oil, or any oil of your preference.
  • Toasted sesame seeds: It's optional for additional flavor.

Step 4

Add grated ginger to a large skillet.

Add the grated ginger to the pan and cook for an additional minute, stirring.

Step 5

Cook tofu in a large skillet.

Add the crumbled tofu to the pan and cook for about 5 minutes, stirring constantly.

Step 6

Cook tofu in a large skillet.

Pour the sauce over the tofu in the pan and stir until the tofu is evenly coated.

Step 7

Cook tofu in a large skillet.

Sprinkle toasted sesame seeds over the tofu scramble for extra flavor and texture.

  • 2 Green bell peppers, chopped
  • 3 Shiitake mushrooms, chopped
  • 1 clove Ginger, grated
  • 1 block Firm tofu, 300g
  • 1 tablespoon Oil for cooking
  • Toasted sesame seeds, optional

Sauce

  • ½ tablespoon Miso paste
  • 1 tablespoon Soy sauce
  • 1 tablespoon Water

Instructions
