Easy Vegan Tofu Scramble With Miso Paste

- 1 Frying pan 26cm (10 inch)
Ingredients
- 2 Green Bell Peppers
- 3 Shiitake Mushrooms
- ⅓ tsp Grated Ginger
- 1 block Firm Tofu, 300g
- 1 Tbsp Oil for cooking
- Toasted Sesame Seeds, optional
Miso Sauce
- ½ Tbsp Miso Paste
- 1 Tbsp Soy sauce
- 1 Tbsp Water
Instructions
- Prepare the Ingredients: Chop green bell peppers and shiitake mushrooms. Grate the ginger.
- Prepare the Sauce: In a small bowl, combine the miso paste, soy sauce, and water. Mix well to create a smooth sauce.
- Cook Vegetables: Heat the oil in a large frying pan over medium heat. Add the chopped bell peppers, shiitake mushrooms, and grated ginger. Cook for about 5 minutes until tender.
- Add Tofu: Add the tofu to the pan and cook for about 5 minutes, stirring constantly.
- Add the Sauce: Pour the sauce over the tofu in the pan and stir until the tofu is evenly coated.
- Sesame seeds: Sprinkle toasted sesame seeds over the tofu scramble for extra flavor and texture.
Notes
- Storage: Store in an airtight container and keep it in the refrigerator. It will be suitable for 2 to 3 days.
- Opt for firm or extra-firm tofu for a scramble. Silken tofu is too soft and won’t hold its shape well.
- If you prefer a firm texture in your scramble, wrap the tofu in a kitchen towel or paper towel and gently press it to remove the excess moisture. Click here to learn how to press the tofu.

Thanks for your comment!I’ve adjusted the recipe to 1/3 teaspoon of grated ginger as it’s a more accurate measurement. Ginger is added for extra flavor, so feel free to use more or less to suit your taste!
