Step 1

Daikon Takikomi Gohan (Japanese Seasoned Rice)

Ingredients
Rice Seasonings
- ½ tsp Dashi Powder
- 1 Tbsp Mirin
- 1 Tbsp Soy Sauce
- 1 Tbsp Sake
- ½ tsp Salt
Instructions
- Soak rice: Put rice in a medium-sized pot, rinse the rice, and soak for 30 minutes or more.
- Prepare Ingredients: Cut daikon and carrot into small pieces. Cut the aburaage into thin strips.
- Bring to a boil: Drain the water from the rice, add 360ml of fresh water, and bring to a boil over medium heat.
- Add seasonings: Add mirin, soy sauce, sake, salt, and dashi powder, and stir with a rice paddle.
- Simmer: Place the cut ingredients on the rice, put the lid on, and cook over low heat for 12 minutes.
- Steam: Turn off the heat and leave it for another 10 minutes with the lid on.
- Stir: Open the lid and gently stir from the bottom (do not mash rice grains).

- Storage: 1 month in the freezer.
- Soak the rice in water for at least 30 minutes for fluffy rice to help it absorb moisture. You can also soak them overnight and cook them the next day. It’s best to soak the rice in the refrigerator if the room temperature is high.
- When the rice reaches a boil, stir it to distribute the heat evenly.
- Don’t open the lid right after cooking. Let the rice rest for 10 minutes to soak up the water in the pot, making it fluffy.
