Ingredients

  • 2 cups Japanese Short-grain Rice
  • 2 cm Daikon
  • ½ Carrot
  • 1 Aburaage
  • 2 cups Water

Rice Seasonings

Instructions

  • Soak rice: Put rice in a medium-sized pot, rinse the rice, and soak for 30 minutes or more.
  • Prepare Ingredients: Cut daikon and carrot into small pieces. Cut the aburaage into thin strips.
  • Bring to a boil: Drain the water from the rice, add 360ml of fresh water, and bring to a boil over medium heat.
  • Add seasonings: Add mirin, soy sauce, sake, salt, and dashi powder, and stir with a rice paddle.
  • Simmer: Place the cut ingredients on the rice, put the lid on, and cook over low heat for 12 minutes.
  • Steam: Turn off the heat and leave it for another 10 minutes with the lid on.
  • Stir: Open the lid and gently stir from the bottom (do not mash rice grains).
