Simmered mackerel and daikon ingredients.
  • Daikon: Choose a firm, heavy daikon with smooth, shiny skin. Its flavor and texture can vary depending on which part you use.
  • Mackerel: Use one can of mackerel packed in water. The liquid is full of savory flavor, so add it to the pan along with the fish. If using mackerel packed in oil, drain it well first.
  • Seasonings: Soy sauce, mirin, sake, sugar, and ginger create a classic Japanese savory flavor.
  • Sesame oil: Use it to stir-fry the daikon. It adds a nice toasted flavor, but you can use another cooking oil if you prefer.

Recipe Tips

  • Cut the daikon into pieces of similar size so they cook evenly.
  • Add the mackerel gently and avoid stirring too much so the pieces don’t break apart.
  • Use a drop lid or parchment paper cut to fit. It helps the daikon cook evenly in the broth.

What To Serve With

I recommend serving this dish over a bowl of rice. It also goes well with a refreshing sunomono salad and savory kakitamajiru (egg soup).
