Shoyu ramen ingredients.
  • Ramen noodles: You can use fresh, dried, or instant ramen noodles. Fresh noodles provide the best chewy texture, but any type will work.
  • Ramen soup: Shoyu means “soy sauce” in Japanese, and it gives the broth its savory flavor and rich brown color. This simple soup is also flavored with dashi powder, garlic, and sesame oil. I use bonito dashi powder, but kombu dashi powder also works.
  • Toppings: I use boiled eggs, menma, scallions, and chili oil, but you can customize your ramen with your favorite toppings.

Ingredients
  

  • 2 servings ramen noodles
Soup
  • 3 cups water, 720ml
  • 1 tsp dashi powder
  • 1 clove of garlic, grated
  • 1 Tbsp sesame oil
  • 3 Tbsp soy sauce
Toppings
  • 2 boiled eggs, halved
  • 1 scallion, chopped
  • menma, optional
  • chili oil, optional

Instructions
 

  1. Prepare the toppings: Cut the boiled eggs in half and chop the scallion.
  2. Make the soup: Add the water, dashi powder, grated garlic, sesame oil, and soy sauce to a pot. Bring to a gentle boil over medium heat, then reduce the heat and simmer for 1–2 minutes.
  3. Cook the Noodles: While making the soup, boil the ramen noodles according to the package instructions and drain.
  4. Assemble: Pour the soup into a bowl, then add the noodles. Top with the boiled eggs, scallions, and menma. Finish with chili oil, if desired.

Notes

  • As you prepare the soup, taste it and tweak the flavor with soy sauce if needed.
  • Stir the noodles gently while cooking to prevent them from clumping.
