Enjoy a refreshing harusame salad! This light, crunchy dish features glass noodles, crisp veggies, and a tangy Japanese-style dressing that both kids and adults will love!

Ingredients
  

  • 40 g Harusame Noodles
  • 1 Cucumber
  • ½ Carrot
  • 1 tsp Toasted Sesame Seeds, optional
For the Dressing
  • Tbsp Soy Sauce
  • 1 Tbsp Sugar
  • Tbsp Rice Vinegar
  • 1 tsp Sesame Oil

Instructions
 

  1. Prepare the Ingredients: Cook the harusame noodles according to the package instructions. Drain and rinse under cold water. Thinly slice the cucumber and carrot.
  2. Make the Dressing: In a small bowl, whisk together the soy sauce, sugar, rice vinegar, and sesame oil until the sugar is dissolved.
  3. Toss the Salad: In a bowl, combine the cooked noodles, cucumber, carrot, and toasted sesame seeds. Pour the dressing over the salad and toss gently until evenly coated.
  4. Serve: Transfer to a serving plate and enjoy!

Notes

  • Drain the harusame noodles thoroughly after boiling to prevent the salad from becoming watery. If the noodles are too long, cut them into bite-sized pieces.
  • You can start by pouring half of the dressing, then taste it, and add more if needed to suit your preference.
  • Chill the salad in the fridge for at least 30 minutes to allow the flavors to meld and make it extra refreshing.
