Fish burger ingredients.
  • Fish: Choose fish that holds its shape well when cooked. I used aji, or Japanese horse mackerel, for this recipe, but you can also use cod, salmon, or another firm fish.
  • Flour, eggs, and panko: These three ingredients create the crispy coating for the fish.
  • Oil: Use a neutral oil suitable for pan-frying.
  • Egg mayo sauce: This simple sauce is made with boiled eggs, mayonnaise, vinegar, sugar, salt, and pepper.
  • Vegetables: This recipe uses lettuce, cabbage, and carrots to add freshness and crunch. You can adjust the vegetables to your taste or use what you have on hand.
