About Annou Imo
Annou Imo (安納芋) originates from Kagoshima Prefecture and is known for its deep orange flesh and rich natural sweetness. High in moisture, it becomes soft, creamy, and syrupy when roasted, developing an exceptionally sweet flavor. Its rich taste has made Annou Imo one of Japan’s most popular sweet potato varieties in recent years.

How To Make Yaki Imo
Here’s a quick guide to making roasted sweet potatoes:
- Wash and wrap the sweet potatoes in foil.
- Roast at 160°C (320°F) for about 60 minutes.
- Leave them in the warm oven for an additional 15–20 minutes to bring out maximum sweetness.
The roasting method is the same as my basic Yaki Imo recipe. Check out that post for step-by-step instructions and helpful tips!
