  • Easy to prepare with just a few staple items.
  • Enjoy the traditional tempura rice bowl at home.

Kakiage

Kakiage is a tasty tempura dish crafted from thinly sliced vegetables, coated in a light batter, and fried to crispy. Enjoy it on its own or as a topping for rice bowls, known as kakiage don. It’s also a popular addition to noodle dishes like udon and soba (kakiage udon, kakiage soba).

Recipe Ingredients

You’ll need the following ingredients to make this Tempura Rice Bowl Recipe:

Kakiage don ingredient list.
  • Kakiage: See how to make kakiage. This kakiage combines onions, carrots, and scallions and create a light and crunchy texture. It pair well with the rice.
  • Rice: For an authentic experience, use Japanese short-grain rice. If you’re unsure how to cook it, follow our step-by-step instructions for preparing Japanese rice on the stove for perfect results every time.
  • Sauce: Combine soy sauce, mirin, sugar, and dashi (soup stock) for a rich umami flavor. For convenience, I use dashi powder in this recipe.

For Vegans:

Dashi is a type of stock that usually contains fish such as sardines and bonito. However, you can easily substitute it with a plant-based one, like kombu dashi powder or homemade vegan dashi with shiitake and kombu.
