Ingredients
  

For The Mackerel Soboro
  • 1 canned Mackerel, 190g
  • ½ clove Ginger, grated
  • 2 Tbsp Soy sauce
  • 1 Tbsp Mirin
  • ½ Tbsp Sugar
  • 1 Tbsp Sake
For The Egg Soboro
  • 2 Eggs
  • 1 Tbsp Sake
  • 1 tsp Sugar
  • A little Salt

Instructions
 

For The Mackerel Soboro
  1. Prepare the Ingredients: Drain the water from the mackerel can, wrap the mackerel in a kitchen towel, and squeeze to remove the moisture. Grate the ginger.
  2. Cook the Mackerel: In a medium-sized pot, combine the mackerel, grated ginger, soy sauce, mirin, sake, and sugar. Cook over medium heat, stirring until the mixture becomes crumbled.
For The Egg Soboro
  1. Beat the Eggs: Crack the eggs into a pot. Add sake, sugar, and salt, and beat until well combined.
  2. Cook the Eggs: Cook the egg mixture over medium heat, stirring until it crumbles.
Pack the bento
  1. Fill the entire lunch box with rice. Neatly place the mackerel and egg soboro on top of the rice. Arrange your side dishes in the remaining space. (See 'how to pack bento' section)

Notes
