Japanese Style Vegan Tofu Nuggets.

Equipment

  • Food processor
  • Medium frying pan

Ingredients

  • 1 block Firm Tofu, 360g
  • cup Cashew Nuts
  • cup Panko
  • tsp Salt
  • Pepper, to taste
  • 1 Tbsp Wheat flour, All-purpose flour, cake flour
  • Oil, for pan-frying

Instructions

  1. Press Tofu: Thoroughly press the tofu to remove excess water.
  2. Blend: In a food processor, blend the tofu, cashew nuts, panko, salt, and pepper until smooth.
  3. Form: Roll and flatten the tofu mixture into nugget-sized pieces, coating each piece with flour.
  4. Pan-fry: Heat a generous amount of oil in a frying pan over medium heat. Pan-fry the nuggets for 2 to 3 minutes on each side until golden brown.

Notes

  • Storage: These Tofu Nuggets will stay fresh for one day in the fridge and up to one month in the freezer. For more details, please refer to the 'Storage' section.
  • If the tofu mixture is too soft to form into nuggets, add more panko to make it firmer.
  • To prevent the tofu mixture from sticking to your hands while shaping it, sprinkle flour on your palms before forming the nuggets.
  • After pan-frying the tofu nuggets, place them on a paper towel or wire rack to drain any excess oil.
