Tofu Donburi (Vegan Teriyaki Rice Bowl)

Equipment

  • 1 Frying pan, 26cm (10 inch)

Ingredients
  

  • 1 block Firm tofu, 350g
  • 3 Tbsp Potato starch
  • Vegetable oil, for pan frying
For The Teriyaki Sauce
  • 1 Tbsp Mirin
  • 1 Tbsp Soy sauce
  • 1 Tbsp Sake
  • 1 tsp Sugar
For Serving
  • 2 servings Cooked Japanese rice
  • Shredded nori
  • Roasted or steamed vegetables
  • Toasted sesame seeds, for garnish

Instructions
 

  1. Prepare the Tofu: Place a heavy object on top of the tofu for 30 minutes to remove excess moisture. Cut the tofu into small pieces.
  2. Pan-fry the Tofu: Heat vegetable oil in a frying pan over medium heat. Cover each tofu piece with potato starch and pan-fry until crispy. Flip them over to ensure both sides are nicely crispy. Transfer the tofu to a wire rack to drain the excess oil, once done.
  3. Prepare the Teriyaki Sauce: In the clean frying pan, combine mirin, soy sauce, sake, and sugar for the teriyaki sauce. Bring the mixture to a simmer over medium heat, stirring occasionally to dissolve the sugar and blend the flavors.
  4. Combine Tofu with Sauce: Return all the cooked tofu to the frying pan and coat it with the teriyaki sauce.
  5. Assemble the Tofu Donburi: Serve cooked rice in a medium bowl, sprinkle shredded nori over the rice, and place teriyaki tofu on one side and roasted vegetables on the other. Garnish generously with sesame seeds.

Notes

  • Storage: Store any leftover teriyaki tofu in an airtight container in the fridge and consume it within two days. When you're ready to eat, heat it in the microwave.
  • Make sure to get rid of extra water from the tofu thoroughly. This prevents it from being watery and helps it absorb the teriyaki sauce better. Follow a simple guide for pressing tofu.
  • You can adjust the teriyaki sauce to your liking; add more sugar and mirin for a sweeter flavor.
  • For the best experience, serve your teriyaki tofu on freshly steamed Japanese rice.
