This Tamago Don is a tasty comfort food with simple ingredients: egg and rice. It is an excellent choice for those who enjoy classic Japanese cuisine and also for vegetarians seeking a meat-free alternative!

Equipment

  • 1 Medium frying pan, 22 cm, 8.7 inches

Ingredients
  

  • 1 Onion, 3.5 oz
  • ½ Scallion
  • 3 Eggs
  • ½ cup Water
  • 2 Tbsp Mirin
  • 2 Tbsp Soy sauce
  • ½ tsp Kombu Dashi powder
  • 2 servings Cooked Rice, 10oz, 300g

Instructions
 

  1. Prepare vegetables: Slice onion thinly and chop scallion.
  2. Beaten egg: In a small bowl, crack the egg and beat it.
  3. Simmer onion: In a medium frying pan, add water, mirin, soy sauce, dashi powder, and sliced onion and boil over medium heat.
  4. Simmer: Reduce the heat to low and simmer for 5 minutes or until the onion is tender.
  5. Add egg: Gently pour the beaten egg into the pan and continue to cook until egg is cooked through.
  6. Serve: Place the cooked rice in a bowl and place the egg mixture on top. Add chopped scallions for the garnish.

Notes

  • Add eggs in two batches to achieve the perfect egg texture, ensuring a firm bottom and a fluffy top without overcooking.
  • You can customize your Tamago Don by adding your favorite veggies like shiitake mushrooms, green onions, bok choy, cabbage, and carrots.
