Equipment

  • 1 Frying pan, 26cm (10 inch)

Ingredients
  

  • 2 Green Bell Peppers
  • 3 Shiitake Mushrooms
  • tsp Grated Ginger
  • 1 block Firm Tofu, 300g
  • 1 Tbsp Oil for cooking
  • Toasted Sesame Seeds, optional
Miso Sauce
  • ½ Tbsp Miso Paste
  • 1 Tbsp Soy sauce
  • 1 Tbsp Water

Instructions
 

  1. Prepare the Ingredients: Chop green bell peppers and shiitake mushrooms. Grate the ginger.
  2. Prepare the Sauce: In a small bowl, combine the miso paste, soy sauce, and water. Mix well to create a smooth sauce.
  3. Cook Vegetables: Heat the oil in a large frying pan over medium heat. Add the chopped bell peppers, shiitake mushrooms, and grated ginger. Cook for about 5 minutes until tender.
  4. Add Tofu: Add the tofu to the pan and cook for about 5 minutes, stirring constantly.
  5. Add the Sauce: Pour the sauce over the tofu in the pan and stir until the tofu is evenly coated.
  6. Sesame seeds: Sprinkle toasted sesame seeds over the tofu scramble for extra flavor and texture.

Notes

  • Storage: Store in an airtight container and keep it in the refrigerator. It will be suitable for 2 to 3 days.
  • Opt for firm or extra-firm tofu for a scramble. Silken tofu is too soft and won't hold its shape well.
  • If you prefer a firm texture in your scramble, wrap the tofu in a kitchen towel or paper towel and gently press it to remove the excess moisture. Click here to learn how to press the tofu.
