Beat the heat with this easy and delicious tomato somen noodles! Chilled juicy tomatoes and thin somen noodles make the perfect refreshing summer combo!

Ingredients
  

  • 1 serving Somen Noodles
  • 1 Tomato
  • ½ tsp Grated Garlic
  • 1 Tbsp Mentsuyu
  • ½ Tbsp Olive Oil

Instructions
 

  1. Cook the Noodles: Bring a pot of water to a boil and cook the somen noodles for 1-2 minutes. Drain and rinse under cold running water to cool completely.
  2. Prepare the Tomato Topping: Chop the tomato into small pieces and place in a bowl. Add grated garlic, mentsuyu, and olive oil. Mix well.
  3. Serve: Place the chilled noodles in a serving bowl and spoon the tomato mixture over the top. Enjoy!

Notes

  • If you can’t find somen noodles, feel free to substitute with other thin noodles.
