Ingredients
  

  • 1 serving Soba Noodles
  • ½ Celery
  • ½ Carrot
  • ¼ Red Onion
  • Salt and Pepper to taste
Mayo Dressing
  • 2 tsp Olive Oil
  • 2 Tbsp Mayonnaise
  • 1 Tbsp Yogurt
  • 1 Tbsp Rice Vinegar
  • ¼ tsp Salt
  • 1 wedge Lemon

Instructions
 

  1. Prepare Vegetables: Slice the celery, carrot, and red onion into thin strips.
  2. Boil Soba Noodles: Boil water in a pot and cook soba noodles according to package instructions and drain.
  3. Make the Dressing: Put all the dressing ingredients in a small bottle, put the lid on, and shake to blend.
  4. Combine: Put together the sliced vegetables, cooked soba noodles, and dressing in a bowl, gently combining them.

Notes

  • Make sure to follow the package instructions for cooking the soba noodles. Overcooking can lead to a mushy texture.
  • After boiling soba noodles, rinse them under cold water to stop the cooking process and remove excess starch. This helps prevent them from sticking together and maintains their firm texture.
  • For the best flavor and texture, just wait to add the dressing until right before serving.
  • This salad can be made ahead of time and stored in the refrigerator before serving.
