Ingredients
  

  • 1 Eggplant, medium size, 300g
  • 1 Tbsp Olive oil
  • pinch Sesame seeds, for toppings
For The Miso Glaze
  • ½ tsp Soy Sauce
  • 1 Tbsp Mirin
  • 1 Tbsp Sugar
  • 1 Tbsp Miso Paste

Instructions
 

  1. Cut Eggplant: Remove the stem of the eggplant and cut it into round slices.
  2. Cook Eggplant: Heat a frying pan over medium heat and add the oil. Place the eggplant slices in the pan and cook for 2 to 3 minutes or until slightly browned. Flip them over and cook for a few more minutes.
  3. Make the Miso Glaze: Combine soy sauce, mirin, sugar, and miso paste in a small pot and heat gradually until it boils. (or microwave it)
  4. Serve: Place the eggplant slices to a serving plate, pour the miso glaze over, and sprinkle sesame seeds.

    • Choose eggplants that are firm and shiny for the best results.
    • Fresh eggplants have sharp thorns on their stems. Be careful to avoid touching these thorns.
    • Adjust the sweetness and saltiness of the glaze according to your taste preferences.
