Japanese teriyaki tofu and mushrooms

Equipment

  • Medium frying pan

Ingredients

  • 1 block Tofu, firm or extra firm
  • 1 cup Mushrooms, shiitake, button, or your choice
  • Salt and Pepper, to taste
  • 1 Tbsp Flour, for coating the tofu
  • Vegetable Oil, as needed for frying
  • 1 Scallion, chopped, for topping
For the Teriyaki Sauce
  • 1 Tbsp Mirin
  • 1 Tbsp Soy Sauce

Instructions

  1. Prepare the Ingredients: Press the tofu for 30 minutes to an hour to remove excess water. Drain and cut the tofu into 1 cm (0.5 inch) thick slices. Clean and slice the mushrooms into bite-sized pieces.
  2. Stir-Fry the Mushrooms: Heat oil in a frying pan over medium heat. Add the mushrooms, season with salt and pepper, and cook until they are tender and browned. Once done, transfer the mushrooms to a plate.
  3. Pan-fry the Tofu: Lightly coat the tofu slices in flour on both sides. In the same pan, add oil and fry the tofu over medium heat for about 2 minutes per side, or until golden brown and crispy. Transfer the tofu to a plate.
  4. Make the Teriyaki Sauce: In the same pan, add mirin and soy sauce. Stir to combine and bring the mixture to a gentle boil. Let it cook for 1-2 minutes until it thickens slightly.
  5. Combine the Tofu and Sauce: Return the tofu to the pan and toss gently to coat it in the sauce. Cook for another 1-2 minutes, allowing the tofu to absorb the sauce.
  6. Serve: Plate the tofu, top with the stir-fried mushrooms, and sprinkle with chopped scallions. Serve and enjoy!

Notes

  • Storage: It will last in the fridge for 3 days.
  • When frying, use a non-stick pan or a well-seasoned cast iron skillet to prevent tofu from sticking.
  • This teriyaki sauce is not very sweet. If you like a sweeter sauce, add more sugar to match your taste.
  • Serve the tofu with steamed rice or noodles for a more filling meal.
