Ingredients
  

  • 2 Udon noodles, 400g
  • 2 pack Natto, 100g (Use the attached sauce and karashi as well)
  • 2 Eggs
  • 2 Scallions
  • Shredded nori, optional
Mentsuyu (Noodle soup)
  • 1 tsp Dashi powder
  • 3 Tbsp Soy sauce
  • 3 Tbsp Mirin
  • 300 ml Water

Instructions
 

  1. Chop scallions: Chop scallion into small pieces.
  2. Make soft-boiled eggs: Boil water in a small pot, turn off the heat, put eggs, and leave for 10 minutes with the lid on.
  3. Make mentsuyu: Put all the mentsuyu ingredients in a pot, bring to a boil, then turn the heat off.
  4. Boil udon noodles: Boil udon noodles for one minute (if it's frozen udon noodles). Rinse under running water, and drain the water.
  5. Mix natto: Mix natto, natto sauce, and karashi(Japanese mustard) together.
  6. Serve: Place udon noodles, natto, scallions, soft boiled egg, shredded nori on a plate, and pour mentsuyu over.

Notes

  • If your natto doesn't come with the sauce, you can substitute it with soy sauce.
  • You can buy mentsuyu at a store.
