Refreshing Tomato and Tofu Salad with Shio Kombu

This tomato and tofu salad is a great choice even on hot days when you’re not feeling very hungry. Simply top tofu with tomatoes seasoned with shio kombu, and you have a refreshing salad ready in 5 minutes!

Ingredients
  

  • 1 Tomato
  • 1 tsp Shio Kombu
  • ½ Tbsp Soy Sauce
  • ½ Tbsp Sesame Oil
  • ½ block Tofu

Instructions
 

  1. Prepare the Tomato: Cut the tomatoes into small pieces and place them in a bowl. Add soy sauce, salted kelp, and sesame oil, then mix well.
  2. Prepare the Tofu: Drain the tofu and cut it into bite-sized cubes.
  3. Serve: Arrange the tofu on a plate and place the seasoned tomatoes over the top. Enjoy!

Notes

  • Tofu naturally releases moisture over time, so it’s best to enjoy this salad right after making it.
  • If you’re not eating it right away, press the tofu for about 10 minutes to remove excess water.
  • Looking for a variation? Use more tofu and serve it as hiyayakko (chilled tofu).
