Equipment

  • 1 Medium size fying pan

Ingredients
  

  • 1 Lotus root, 300g
  • Oil for frying
Batter
  • 4 Tbsp Rice flour
  • 2 Tbsp Potato starch
  • 2 Tbsp Mayonnaise
  • 6 Tbsp Water
  • 1 tsp Curry powder
  • ¼ tsp Salt

Instructions
 

  1. Slice lotus root: Peel the lotus root, slice it, and cut it into half rounds.
  2. Soak lotus root: Soak the lotus root for 5 minutes, drain completely, and dry them with a paper towel.
  3. Make the batter: Add the batter ingredients to a bowl and blend well.
  4. Deep-fry: Pour oil into a frying pan and warm it up. Dip the lotus root slices in the batter, put them in the pan, and deep-fry until slightly browned (2 to 3 minutes).
  5. Deep-fry: Flip them over and cook for one more minute. Place them on a cooling rack to drip excess oil.
  6. Serve: Serve the fried lotus root along with your favorite dipping sauce.

Notes

  • Customize the batter consistency to your preference by adjusting with more water or rice flour until you reach your desired thickness.
  • Soak the lotus root in water to prevent discoloration.
  • If you slice the lotus root thinly, you can create crispy chips.
