1small piece ofginger, minced
⅛onion, minced
1Tbspsesame oil

1Tbspmirin
1Tbspsoy sauce
3Tbspmiso paste
Instructions
Preparation: Cut the vegetables into bite-sized pieces or thin strips. Mince the garlic, ginger, and onion.
Make the Soup: Heat the sesame oil in a large pot over medium heat. Add the garlic, ginger, and onion, and sauté until fragrant. Add the water, sake, mirin, and soy sauce, and bring to a gentle boil.
Cook Vegetables: Add the cut vegetables to the pot and simmer for a couple of minutes.
Add Miso Paste: Turn off the heat. Add the miso paste and stir gently until completely dissolved. A miso muddler or small whisk makes this easier.
Cook the Noodles: While making the soup, boil the ramen noodles according to the package instructions and drain.
Assemble: Place the drained noodles in a serving bowl and ladle the hot soup over the noodles, ensuring they are fully submerged. Place the vegetables on top.
Notes
As you prepare the soup, taste it, and feel free to adjust the ingredients to suit your personal preference.
When cooking noodles, stir them gently to prevent them from clumping together.
For extra umami, replace some or all of the water with vegetable broth or kombu dashi.
