This Vegan Chickpea Salad with chickpeas and avocado is simple, easy, healthy and actually make you satisfy. Let me show you how to make it.

Vegan Chickpeas Salad

This is simple salad with chickpeas and avocado. Chickpeas are soft and flaky and goes well with creamy avocado. I love eating them both together.

Just squeeze a piece of lemon and sprinkle salt and pepper. Nothing complicated.

I prefer to use dry chickpeas and cook in a pressure cooker, not canned chickpeas. The taste much better, it’s sweet and doesn't include preservatives.

Vegan Chickpeas Salad Ingredients

Here is ingredients for the salad.

  • Cooked Chickpeas >> I use the one boiled in a pressure cooker the day before
  • Avocado >> I prefer the one a little harder, but this one is too soft (I missed the timing)
  • Sprout >> I use broccoli sprout for topping. This is optional.
  • Olive Oil
  • Lemon 
  • Salt and Pepper

How to Make Vegan Chickpeas Salad

Now that we have all the ingredients so let's make a salad. How to make is super easy.

  1. Cut Avocado >> Cut an avocado in half, remove the seeds, peel and dice it
  2. Put in a bowl >> Put avocado and cooked chickpeas in a bowl
  3. Season >> Add olive oil, lemon, salt and pepper
  4. Mix >> Roughly mix them together

Serve on a plate, top with sprouts and enjoy this healthy & tasty salad!

Variations of Chickpeas Salad

If you try this recipe, why don't you try adding more ingredients to increase the repertoire. Here is my recommendation.

  • For Vegan → Add mashed potatoes and get more carbs
  • For Vegetarian → Add boiled eggs and get more protein
  • If you like tomatoes →Add tomatoes and make a colorful salad
  • If you like bread → stuff the chickpeas salad and make a healthy sandwiches

Ingredients
  

  • 3 cup Cooked Chickpea
  • 1 Avocado
  • 1 tablespoon Olive Oil
  • 1 Lemon Wedge
  • Pinch of Salt and Pepper
  • Sprout for topping, optional

Instructions

  • Cut an avocado in half, remove the seeds, peel and dice it
  • Put avocado and chickpeas in a bowl, add olive oil, lemon, salt and pepper
  • Roughly mix them together, serve on a plate, and top with sprouts

Notes

  • I recommend to cook chickpeas on your own but it's ok to use canned chickpeas
  • Avocado will turn brown, so it is better to eat as soon as possible
