Description

Japanese soba noodle turn into a colorful salad. Mix soba noodle with lots of fresh vegetables and refreshing mayo dressing. It's easy to make and perfect for light meal.


Ingredients

Scale
  • 1 bundle Soba Noodle
  • 1/2 Carrot
  • 1/2 Celery
  • 1/4 Red Onion
  • Pinch of Sesame Seed

Dressing

  • 2 tsp Olive Oil
  • 2 tbsp Mayonnaise
  • 1 tbsp Yogurt
  • 1 piece Lemon
  • 1 tbsp Vinegar
  • Pinch of Salt

Instructions

  1. Bring water to a boil in a pot and boil soba noodles(follow the instructions on the package)
  2. Cut all the vegetable into thin strings
  3. Mix all dressing ingredients well in a small bowl
  4. Drain the water and wash the soba noodles thoroughly with cold water to remove the starch
  5. Transfer the boiled soba,  chopped vegetables, dressing into a bowl and mix lightly
  6. Lastly sprinkle sesame seeds on the top

Notes

  • The vinegar i use in the recipe is rice vinegar
  • I use mild sour yogurt. If you have sour yogurt, just check the taste of dressing before mixing whole ingredients
  • If you cut the vegetables as thin and long as possible, it will be easier to mix with soba.
