Chahan

Chahan is a Japanese fried rice dish with cooked rice, eggs, vegetables, and various proteins, such as seafood, fish, or meat, seasoned with simple ingredients. Known for its savory taste and ease of preparation, it’s a favorite for a quick meal.

Recipe Ingredients

You’ll need the following ingredients to make this Corned Fried Rice:

Ingredients for Japanese corn fried rice (chahan)
  • Cooked rice: In Japanese cooking, we use short-grain rice, but you can also use long-grain rice if preferred. If you’re new to cooking Japanese rice, please take a look at this recipe: How to cook Japanese rice on the stove.
  • Vegetables: Corn, onion, and either scallions or mitsuba. I use mitsuba, which is Japanese parsley, in this recipe.
  • Salt and pepper to taste.
  • Oil: I recommend using sesame oil for its excellent aroma in fried rice, but feel free to use your favorite oil.

Chop onion and cut the corn off the cob.

Finally, serve the fried rice on a plate and top with chopped mitsuba. Enjoy it with salad and miso soup for lunch or dinner! It’s also good for bento (lunch box).

Recipe Tips

  • Leftover rice or frozen rice works best for chahan. Just warm it up a bit before stir-frying. I don’t recommend freshly cooked rice as it can become soggy.
  • When stirring the rice, use a spatula to cut through the stir-fry quickly. Avoid pressing down too hard from the top, which can crush the rice.

What To Serve With

To complement this Corn Fried Rice, I recommend serving it with tofu miso soup, pickled napa cabbage, and vegetable gyoza!

  • Prepare Ingredients: Chop onion and mitsuba. Cut the corn in half, place it vertically and cut the corn off the cob
  • Stir-fry Vegetables: Heat a frying pan on medium heat, put oil, and stir fry onion on medium heat until tender. Add corn and fry for a couple of minutes and eason with salt and pepper
  • Stir-fry Rice: Add the rice and stir-fry until combine well.
