  • Kanten: It's a vegan/vegetarian substitute for gelatin made from red seaweed. It's rich in dietary fiber, which is great for the digestive system. It also contains zero calories! You can purchase kanten at a Japanese grocery store. You can also substitute it with agar agar powder (made from red algae) or gelatin if you can't find kanten at a store.
  • Corn Starch: Adding a little corn starch results in a firmer texture for your jelly, making it thicken. You can omit it if you don't have any at home.
  • Sugar: I use cane sugar in this kanten recipe, but any type of sugar is ok.
  • Fruits: Pick your favorite fresh fruits. I added strawberries, blueberries, melons, and pineapples to the recipe. You can also use canned fruits, but they tend to have lots of sugar and additives, so I don't recommend them. Fresh fruits taste much better and are more healthy!
  • Water

I will use a glass food storage container and ice cube tray to solidify the jelly in this recipe.

  1. Make jelly: Add kanten, sugar, corn starch, and water in a pot, and mix until smooth. Bring to a boil on medium heat, then turn to low heat and let slow simmer for 1 minute.
  2. Cut fruits: Cut fruits and put them into separate bowls (mix as you prefer).
  3. Prepare first fruits: Add the first batch of fruits to an ice cube tray and fill each section with a jelly mixture.
  4. Add more fruits: Add the second batch of fruits to a glass food storage container. Next, pour the mixture into the container until it covers the fruit.
  5. Refrigerate: Let refrigerate for at least 30 minutes (no photo).

  • 1 Ice Cube Tray

Ingredients
  

  • 1 teaspoon Kanten, 2g
  • 2 tablespoon Sugar, 20g
  • 2 teaspoon Corn starch, 5g
  • 300 ml of Water
  • Fruit of your choice

Instructions

  • Mix ingredients: Add kanten, sugar, corn starch, and water in a pot, and mix until smooth. 
  • Make jelly: Bring to a boil on medium heat, then turn to low heat and let slow simmer for 1 minute.
  • Cut fruits: Cut fruits and put them into separate bowls (mix as you prefer).
  • Add fruits: Add the first batch of fruits to an ice cube tray and fill each section with jelly mixture. Add the second batch of fruits to a glass food storage container. Next, pour mixture into the container until it covers the fruit.
